Zucchini Chips

I am currently munching away on these delicious little "chips." These are my new favorite snack dipped in a little light ranch and an innovative way to get your veggies in. Baked in a mixture of parmesan cheese and bread crumbs at a scorching temperature of 425 degrees F for 30 minutes, these zucchini chips have a fantastic crunch that satisfy any craving you might have for a less than healthy bag of potato chips. I usually do a combination of zucchini and butternut squash and I think I actually prefer the butternut squash but both are good. As mentioned previously, I like to dip these in light ranch, but I've heard they're also good dipped in marinara sauce which would be a bit healthier i suppose.
