Before I talk about this food item, I'd just like to say that today I tried out my first ever piloxing class (pilotes/boxing) and it was SO fun! Throwing jabs and upper cuts arm my new favorite things so watch out! I'll get rid of that arm flab in no time!
Anyway, this is a photo of an avocado tuna salad -yet another one of my own concoctions. Just combine a can or packet of tuna with one small, cut up or mashed avocado and about a tablespoon of reduced fat mayo plus salt and pepper. I've seen recipes that include diced onion and celery which I think would be good but I didn't have those ingredients on hand. Anyway, that's a pretty straight forward one. Kind of boring I suppose. I think I might pair this with a scrambled egg with salsa and some edamame -mmmm!
