Avocado Egg Sandwich

Okay, so this isn't really a recipe but rather my own breakfast concoction and I was eager to post a new food item! Anyway, this delicious sandwich was created by first cooking one egg in a skillet over medium heat. Meanwhile, I massed up one small avocado and mixed it up with some salsa which basically made guacamole. If you use one of those giant Hass avocados, I would just use half, but I was using a small, crappy one from Wal-Mart. I then spread the guacamole mixture onto my bread (Sara Lee's 45 calorie bread). Then I placed the cooked egg on top of the guac and added a piece of Sargento's thin sliced provolone cheese. After putting my sandwich together, I placed it in my panini grill to make it warm and toasted. If you don't have a panini grill you could also put it under the broiler for a bit. Enjoy!
