Zucchini Chips
I am currently munching away on these delicious little "chips." These are my new favorite snack dipped in a little light ranch and an innovative way to get your veggies in. Baked in a mixture of parmesan cheese and bread crumbs at a scorching temperature of 425 degrees F for 30 minutes, these zucchini chips have a fantastic crunch that satisfy any craving you might have for a less than healthy bag of potato chips. I usually do a combination of zucchini and butternut squash and I think I actually prefer the butternut squash but both are good. As mentioned previously, I like to dip these in light ranch, but I've heard they're also good dipped in marinara sauce which would be a bit healthier i suppose. Clear American Water
Sooo obviously this is not a recipe, but i just had to share this because I have recently discovered this delicious carbonated water and it's my life saver when it comes to dieting. This water curbs my late night cravings thanks to it's yummy taste and satisfies my hunger due to the carbonation. It's like a secret weapon! I buy mine at Wal-Mart and these gaint 1 liter bottles come in many different flavors and are less than a dollar each! -SO CHEAP! I have tried the kiwi strawberry, the raspberry, the grape and, as you can see, the peach and they are all good! I've also seen cherry, apple, and lemon flavored ones but have not tried those yet. Berry Greek Yogurt
Delicious and nutritious! I created this mixed berry greek yogurt from simple ingredients in my fridge and pantry! This one is made with one cup of plain greek yogurt, bluberries, strawberries, 3-4 tablespoons of honey and some sugar-free vanilla syrup (the kind that's supposed to be used for coffee, but i use it to flavor smoothies and plain yogurt a lot). Just blend this all together in a blender or food processor and stick it in the fridge for 10 minutes or until it's at your desired consistency. Of course you can make your own greek yogurt creation with a variety of fruits (fresh or frozen) and other additives! Enjoy!
Avocado Tuna Salad
Before I talk about this food item, I'd just like to say that today I tried out my first ever piloxing class (pilotes/boxing) and it was SO fun! Throwing jabs and upper cuts arm my new favorite things so watch out! I'll get rid of that arm flab in no time!
Anyway, this is a photo of an avocado tuna salad -yet another one of my own concoctions. Just combine a can or packet of tuna with one small, cut up or mashed avocado and about a tablespoon of reduced fat mayo plus salt and pepper. I've seen recipes that include diced onion and celery which I think would be good but I didn't have those ingredients on hand. Anyway, that's a pretty straight forward one. Kind of boring I suppose. I think I might pair this with a scrambled egg with salsa and some edamame -mmmm!

Avocado Egg Sandwich
Okay, so this isn't really a recipe but rather my own breakfast concoction and I was eager to post a new food item! Anyway, this delicious sandwich was created by first cooking one egg in a skillet over medium heat. Meanwhile, I massed up one small avocado and mixed it up with some salsa which basically made guacamole. If you use one of those giant Hass avocados, I would just use half, but I was using a small, crappy one from Wal-Mart. I then spread the guacamole mixture onto my bread (Sara Lee's 45 calorie bread). Then I placed the cooked egg on top of the guac and added a piece of Sargento's thin sliced provolone cheese. After putting my sandwich together, I placed it in my panini grill to make it warm and toasted. If you don't have a panini grill you could also put it under the broiler for a bit. Enjoy!

Bacon Wrapped Asparagus
This bacon wrapped asparagus is baked in a brown sugar soy sauce which makes for a dish that is sweet and delicious. Although the recipe calls for regular bacon and brown sugar, I opted for turkey bacon and Splenda's brown sugar mix for fewer calories and less fat. My boyfriend and I paired these with grilled chicken breast and Green Giant's steam-in-a-bag sweet potatoes (which we enjoy with a bit of butter and sprinkled with cinnamon) for a nutritious dinner! Philly Cheese Steak Stuffed Peppers
This delicious philly cheese steak stuff pepper is full of healthy ingredients including a sauted mixture of mushrooms, onions, minced garlic and sliced roast beef. Add some of Sargento's thin sliced provolone cheese, pop it in the oven and you'll have a yummy lunch or dinner in no time!!
