Pumpkin Chai Cookies

Okay, so these are a little treat and I'm not sure they're particularly healthy but, they are pumpkin chai cookies and they are about 150 calories for 2 cookies. All I did was use a pumpkin spice cookie mix which required 1 egg, 1 stick of butter and 2 tablespoons of water. I then added 2 tablespoons of chai seeds to the mix and baked as directed on the cookie mix package. I felt like the chai seeds added a bit of nutritional benefit to the cookies and they were delicious. Enjoy!

Baked Eggs

I'm finally posting a new food item! June got SO hectic that I couldn't post anything for awhile. Anyway, these are just baked eggs in a regular sized muffin tin! You can eat them just like this or put them on a sandwich. I seasoned mine with cayenne pepper, red pepper flakes and Tony's creole seasoning. Bake at 350 degrees F for 15-20 minutes. I don't like mine runny at all so I baked them for about 23 minutes and decided that was good enough and didn't want to risk burning them. Enjoy!
